If instead of buying them a gift certificate, you were going to dinner with them, what portion would you pay? Would you be the "host" and pay for their whole meal, regardless of what they ate and drank? Or would you be the gracious friend who paid for some drinks and appetizers, but everyone was in charge of paying for their whole meal?

It would be rude of a host to limit the menu. You want your guests to feel free to order anything off the menu that they wish. Your certificate in this case should be enough to cover an appetizer, a drink, the entree, and a dessert for each person. I think that easily could be $120+ at this restaurant.

However, if your goal is to simply allow your "guests" to enjoy some higher priced items or to enjoy more than "water and an entree", then $50 should be plenty.

$75 is a bad spot. It forces your guests to read the menu from right to left (prices first). It is too much for extras, but not enough for a full spread.
References :
I would say between $75-$100.

I figured out if they got a mixed drink - lets just say $10 a piece there.

Two entrees - average about $40 (together)

Already up to $60 - figure they get an app - add another $10 - up to $70.

So, it might be about about $70 for 2 people for 1 app, 2 entrees and 2 drinks.
References :
I would go $75. The rest could be out of pocket for them. They will know how much they will need if any. Sounds good!
References :
$75 - $100. If you want to cover an entire dinner bill, you would probably want to spend a little more, just in case. Or, if it doesn't matter than you cover a bill entirely, do $50 that way they may or may not have to pay out of their own pocket, depending on what they order.
