After that, there will be no more customers in your restaurant. Then put all your employees to the rest choice. After that, you can just save the game and exit facebook. This way, the next time you log in, there will be no one in your restaurant and your employees will all have 100% energy and you just put them to work and unblock the restaurant for customers to come back to the restaurant and start eating again. This is what most people do every night.
